Instructions:

For the plum cake with almond crust, put the flour in a suitable bowl, press a bulge in the center. Heat the milk and let the yeast melt in it. Pour the yeast milk and 50 g sugar into the hollow. Stir with a little flour to form a steam. Cover and let rise in a warm place for about 20 minutes. Add egg, salt and fat, except for 3 tablespoons, to the flour and knead everything together to a smooth dough. Cover the dough and let it rise in a warm place for about half an hour. In the meantime, rinse the plums, cut them in half and remove the seeds. Caramelize the rest of the sugar in a frying pan until golden and fold in the almond kernels. Add the rest of the fat and stir everything together. Cool brittle on an oiled board and chop coarsely. Knead dough again on floured surface and roll out (about 35 x 40 cm). Spread it on a greased baking tray. Let rise for about half an hour. Cover the dough with plums and sprinkle with brittle. Bake the plum cake with almond crust in a heated oven at about 200 °C for 30-35 minutes. Melt the currant jelly and brush the plums with it.

Preparation Tip:

A dollop of whipped cream goes well with the plum pie with almond crust.
