For the pork tenderloin with apricots, rub the tenderloin with salt and pepper and sauté in hot clarified butter. Steam in the closed frying pan for 15 min. Take out and keep warm.

Mix the stock with some apricot liqueur, crème fraîche and some apricot juice, season with curry powder, salt and pepper.

Cut the apricots in half, remove the seeds and heat in the sauce.
