For the potato and cauliflower soup, peel the potatoes and cut into 2 cm cubes. Clean the cauliflower, wash it, cut it into florets and simmer it in 1l of lightly salted water until soft, then remove it with a sieve ladle.

In the same water boil the potato cubes until soft. In the meantime, knead minced meat with mustard, salt and pepper and breadcrumbs as needed.

Form about 20 small balls. Fry the meatballs in a pan in hot oil for about 5 minutes, turning often, and keep warm! Add half of the cauliflower florets to the potatoes in the soup, stir in the sour cream and puree with a hand blender and boil up briefly.

Season to taste with salt, pepper and nutmeg. Add the remaining cauliflower florets and heat through. Serve the potato-cauliflower soup in deep plates with the meatballs and sprinkle with chopped fresh parsley, if desired.

Preparation Tip:

The potato-cauliflower soup goes best with fresh farmhouse bread!
