1. grind the dry spices in a spice grinder (I use a coffee grinder) thoroughly to a fine powder.

2. remove the seeds from the habanero chilies and chop finely.

3. juice of one lemon, orange juice, vinegar, chili, tequila, spices, salt and garlic in a hand mixer form and mix well.

Cut the meat into 5 cm cubes and place in a large freezer bag with the marinade, seal well and shake well.

Marinate for at least one hour, better for one night, shaking from time to time.

6. spread out a large 25 x 30 cm roasting tin with banana leaves (If you don’t get any, just leave them out.) so that they overlap well and you can fold them up at the top. Pour in meat and marinade, cover with banana leaves and close the mold tightly with aluminum foil.

7. Place in oven at about 165 °C for about four hours. Serve with long-grain rice and garnish with tomato slices, jalapeno or serrano chilies.
