For the quinoa pancakes, mix quinoa and wheat flour together. Mix with eggs, milk, cream, melted butter and a pinch of salt to a rather thin pancake batter. Let rest for 1 hour, then stir well again.

Heat some butter in a pan and pour in a ladleful of batter. Bake briefly, turn and finish baking on the second side. Bake the entire batter in this way to make pancakes.

For the orange sauce, wash the citrus fruits with hot water and rub dry. Peel the peel of half an orange and half a lemon thinly (do not use the bitter white skin!) and cut into fine strips. Fillet 2 oranges (cut out the fillets between the partitions). Squeeze the remaining oranges and the lemon. Mix the cornflour with a little orange juice.

Bring orange fillets with orange juice, lemon juice, Grand Marnier, sugar and vanilla sugar to a boil and simmer for 5 minutes. Stir in cornflour and continue to boil briefly.

Fold the pancakes twice and pour the orange sauce over them.
