The rabbit meat is cut into portion pieces. Shallots and garlic are peeled and finely chopped and sauteed in a frying pan in heated butter until translucent (not brown). Roll the meat pieces in flour and add to the onions in the frying pan. Fry the meat lightly and let the pieces take color. Now pour the heated clear soup and add pepper, salt, thyme from the mill and mustard and cook the meat with the lid closed on low heat in about 1 1/2 hours. Stir in between and taste if the meat is soft. Now remove the rabbit pieces and keep warm on a shallow baking dish. Strain the sauce through a fine sieve and then heat it one more time. Stir in the crème fraîche and form the chopped dill. After seasoning one more time with salt and pepper, pour the delicate sauce over the rabbit pieces. You should bring crispy baguettes and fresh leaf salad to the table with this dish.
