Instructions:

Cut red cabbage into fine noodles.

Caramelize sugar in a pot, add onions and red cabbage and pour in orange juice and red wine.

Let it boil down and then add soup. Season with salt, pepper, cinnamon, lemon juice and balsamic vinegar and simmer for 50-70 minutes until tender.

Meanwhile, stir repeatedly and add more soup if necessary.

Mix a little water or soup with starch and thicken with it shortly before the end of the cooking time (the wheat starch gives the cabbage a nice shine).

Boil the red cabbage well again.

Use: ideal with game, but also with roast beef or roast duck (red cabbage is good for freezing).
