For the red Christmas beet salad, carefully brush but do not peel beets. Boil in hot, unsalted water for about 40 minutes. Beets are ready when they can be pierced artfully with a toothpick.

Then peel the beets (rubber gloves!) and cut them into slices. Also peel the horseradish and slice very thinly. Boil up vinegar with honey and salt and cloves, boil the horseradish slices briefly.

Put the beet into nice glasses, distribute the horseradish slices among the glasses. Fish the cloves out of the liquid and fill the glasses with them. The red Christmas beet salad is ready.

If you boil down the red beets for 30 minutes at 90°C, they will last for a year.
