A wonderful recipe for all strawberry lovers!

Marinate the whole hare like a sauerbraten. I.e. With two carrots, celery of a coarsely chopped juniper berries, onion, basil, 1/2 liter of white wine and a glass of raspberry vinegar.

Leave in the marinade for one night. The following day, brown the meat on all sides with jerky. Add the vegetables without the marinade and sear them as well. Extinguish with half of the marinade.

Stew gently for 120 minutes on low heat. Add marinade and a little bit of beef broth. Season with salt and pepper.

Take out the meat and remove it from the bones while it is still lukewarm. Add the pine nuts, raisins and grated dark chocolate to the sauce and cook briefly. It is then seasoned with sugar, vinegar and pepper. The meat is repeatedly added to the sauce as a ragout.

Ribbon noodles taste very good with it.

This sauce can be used for all types of game.
