Instructions:

Preheat oven to 220 degrees. Clean the salmon, wash, dab dry, marinate with salt, pepper and lemon juice. For the pesto, finely puree all ingredients with a blender. Cut the mozzarella very thinly. Spread pesto on salmon fillet and top with mozzarella. Place in an oil-lined ovenproof dish and bake in the oven for 20 minutes.
