Try this delicious cake recipe:

Set aside 14 speculaas, finely chop the rest in a universal chopper. Melt the fat on 3 or automatic cooking setting 12, knead together with the crumbs and press as a base into a cake springform pan (24 cm ø) lined with parchment paper. set aside to cool for half an hour.

Drain the cherries and cranberries in a sieve and collect the juice. Boil a quarter l of juice with cake glaze and sugar according to the package instructions. Put a good 2/3 of the fruit on the speculoos base form, pour the cake glaze over it and leave to cool for half an hour.

Whip the whipped cream with vanilla sugar and cream thickener until very stiff and place in a piping bag with a large nozzle. Remove the cake from the mold and lift onto a plate. Mark pieces and pipe the whipped cream from the center point onto each piece. Garnish with fruit and speculaas.
