Instructions:

For the spelt lentils wash spelt grains and soak overnight in cold water.

Wash the lentils and cook for about 30 minutes. Finely chop onions and sauté in oil. Add lentils, spelt grains and a bay leaf, sauté for 1 min, add soup and bring to a boil.

Reduce heat and cook again for about 30 min. until spelt is soft and water is absorbed.

If the spelt is not yet cooked but the water is absorbed, add more water if necessary.

Season the spelt lentils with salt, pepper and a little balsamic vinegar.
