For the spelt pizza dough put spelt flour in the mixing bowl and make a well. Add salt, thyme, milk powder and honey.
Pull a little into the flour with a fork. Make another well and add oil, water and the yeast to the well, knead with the dough hook for at least 5 minutes until the dough separates from the edge of the bowl.
Cover the dough and let it stand for about 1 hour. Knead again and place the dough on a floured countertop.
Divide the dough into 2 parts (for two baking sheet pizzas, or into four parts for four round pizzas). Turn these pieces in the flour and sand them round.
Let the spelt pizza dough rise a little again. Flatten the dough pieces with your hands and shape them into the desired shape. Place on a well oiled baking tray and top the pizzas to taste. Bake in the oven preheated to the highest setting on the bottom rack for about 10 minutes.
Preparation Tip:
The milk powder gives the spelt pizza dough extra elasticity, spelt otherwise likes to crumble.
