For the sweet potato noodles, peel and coarsely dice the sweet potatoes and boil in lightly salted water until tender. Drain and press through the potato press into a bowl while still hot.

Mix with semolina, nuts, flour and a pinch of salt, stir in the eggs and let rest for at least 1/2 hour.

The dough is quite soft, so cut small dumplings with a spoon, roll in a little flour and toss in your hand to form small noodles.

Place in lightly boiling water and then let simmer rather than boil. When the noodles rise to the surface, let them stand for a while.

In the meantime, melt butter and fry half crumbs and grated nuts a little, add the noodles to the nut crumbs with a sieve ladle, stir carefully and serve with compote.
