Lightly toast the bread and spread with butter. Heat the clarified butter over medium heat, lightly brown the ham in it on one side and turn. Reduce the temperature.

When the ham is done after about 1-2 min, remove it, briefly dab with a paper towel.

Cook the egg as a fried egg in the frying fat. Put the ham on the bread. Season the egg with salt (not on the egg yolks!) and cayenne pepper. Place on top of the ham. Sprinkle the egg white with the shallot cubes rolled in paprika and serve.
