Instructions:

Mix two thirds of the plucked mint leaves with oil, juice of one lemon, nuts, cayenne pepper and honey in a hand mixer, season. Peel the cucumber. Rinse and clean the bell bell pepper. Dice both very finely. Mix with the mint sauce.

Cut lettuce leaves into thin strips. Cut the cheese into cubes. Knead sifted flour, 1 tsp salt with 100 ml lukewarm water, let rest for about 15 min.

Rinse tomatoes, cut into slices. Arrange on a platter, drizzle with the marinade. Garnish with mint and olives.

Roll out 8 round patties from the dough. Bake in a non-stick frying pan without fat for about 1 minute on each side. Fill with lettuce and cheese, roll up.
