For the tomato basil sauce, mix the crème fraîche with lemon zest, lemon juice, tomato ketchup, salt, pepper and sugar.

Pluck the basil and chop finely. Blanch the tomatoes in hot water, rinse with cold water, peel, quarter, remove the stalk and seeds and cut into cubes.
