Mix the fish with horseradish, pepper, salt, juice of one lemon and 2 tbsp. yogurt in a hand mixer. Whip the cream until stiff. At the beginning, stir in only a third of the fish puree. Carefully fold in the rest. Refrigerate for 4 hours and then form dumplings with 2 teaspoons. Garnish with lettuce.

Tips: Dill and caviar(substitute) make quite a good garnish.
