First, grate the cucumbers into small pieces and squeeze them well with a tea towel (the cucumber mixture should be as dry as possible).
Mix the cucumber shavings, curd cheese, sour cream and yogurt.
Chop a large clove of garlic very finely or crush it with a garlic press and stir it in.
Season the tsatziki with pepper and salt and add the dill and a good dash of olive oil.
Preparation Tip:
The tsatziki tastes best when it has been allowed to soak in the refrigerator for one night.
