For the tuna appetizers, remove canned tuna, drain in a colander and chop or mash into small pieces. Peel hard boiled eggs and cut into small cubes. Chop capers finely, chop young onions also finely. Halve the pitted olives. In a bowl, mix well the mashed tuna, chopped eggs, capers, green onions, olives and chopped parsley. Season with lemon juice and a dash of pepperoni oil, more or less strong, as desired. Mix in the ricotta and finally season with salt and freshly ground pepper. Place a washed and patted dry lettuce leaf on each slice of French bread. Spread tuna mixture and drizzle with a few drops of fine extra virgin olive oil to taste.
