Roughly dice the plums and apricots and bring to the boil in the orange juice. Rinse apples, remove core and cut into cubes. Mix the juice of one lemon with the fruit, butter, chopped nuts and cinnamon. Rinse the turkey and rub it thoroughly dry. Rub it with salt and pepper, fill it with the stuffing and close it well.
