Instructions:

Remove the stalk from the strawberries and cut them in half. Mix with lemon juice and maple syrup.

Lightly caramelize the sugar in a pan, add the butter and let it foam up. Add the cream and simmer until the sugar has dissolved. Then mix in the muesli. Empty the caramel onto a baking tray and allow to cool, then chop into coarse pieces.

Arrange the ice cream in a bowl, spread the strawberries on top and garnish with the caramel crisp and lemon balm.
