Roll out the puff pastry thinly (perhaps in the shape of a fish) and place half of it on a baking tray, cover with the lightly marinated and quickly sautéed fish fillets.

Sauté leek, garlic, shallot, tomatoes, mushrooms and kitchen herbs, briefly soften and season, spread evenly on the fish fillets, cover with the other half of the dough after brushing the edge with egg. Use leftover dough to glue on eye, mouth and maybe scales with egg. Then bake in the oven at about 200 degrees until golden brown and bring to the table on a wooden board.

As sauce addition: e.g. a sabayon with basil and green pepper.

Our tip: If you like to cook with fresh herbs, it is best to get kitchen herbs in pots – so you always have everything ready!
