Instructions:

For the Wazan-Raugg`n, salt the milk, heat it and boil down the semolina. Let it steam out a bit and then let the mixture cool slightly.

Fry the onions in hot butter and mix into the semolina together with the chopped chives and the yolks. Using a soup spoon, cut out dumplings (raugg’n) and coat them in flour, egg and breadcrumbs. Fry them in hot fat.

Lift out the finished Wazan Raugg’n and let them drain.
