For the wholemeal Linzer cake, mix cocoa, almonds, flour, cinnamon, ground cloves and vanilla, make a small indentation in the center, put the egg yolks in, put butter in flakes on the edge, add honey and quickly knead the whole thing into a dough. Whip the egg whites to egg whites and mix in.
Let the dough rest in the refrigerator with the lid closed.
Roll out 2/3 of the dough and pour into a greased tart springform pan, there should be a 2 cm high edge.
Spread the plum date puree on the dough base.
Pour the remaining batter into a piping bag and pipe a lattice pattern on top of the filling. Brush with egg yolk and bake the wholemeal Linzer cake in a heated oven at 180 degrees for one hour.
