For the zucchini towers, cut zucchini into 1 cm thick slices, salt and fry in a pan in olive oil.
Turn slices and top each with a slice of tomato and mozzarella. Cover the pan so the cheese melts.
Season with pepper and top with a fresh basil leaf.
